A retired teacher is asking to unsuspend her account to retrieve something from Google Classroom. Do any other schools allow this?

We generally do not have an issue with this so long as the employee was not let go on bad terms.

If it is only a few Google Documents that were used in the Google Classroom, and the person knows the names of the files, then you could download them from Vault and email them to her.

We are not too strict with it, but we either ask them to come into the IT department, if they still live near the school, or to have a short Google Meet video chat as a check if whoever asks is actually the one they claim to be. This also raises the barrier a little bit for who is asking to actually think what they need to get before they get access, in our experience. We have had a students once impersonate another student to gain access, ever since, this policy has been in place. 

After that, we usually give them 1 or 2 days to get what they need, though their account is now limited in terms of who they can see and such. If they come in we usually help them and disable the account again after they leave if that's possible.

En mi escuela permitimos en circunstancias excepcionales este tipo de acceso. Nosotros llamamos a la profesora para que se presente en el centro y una vez reactivada el usuario, la directora se queda con ella para ver que quiere ver. 

Si la cuenta ha sido eliminada, pasada 20 días ya no se puede reactivar al usuario. Si se suspendió en su momento se podrá volver a reactivar.

We operate very similar to @ddelboccio "We generally do not have an issue with this so long as the employee was not let go on bad terms." 
You could limit them to Google Classroom if required. 
Always good to pass the request on to the top brass for authorisation if you are in a big organisation and do not know all the teachers.

At the end of the year, we run a strong information campaign to take what you need before you leave.
We do not allow staff to use the Takeout service.
If they request access after they leave, we ask what data is needed, then retrieve/review it and share it with their personal address.

As long as they identify themselves to the local administrator at their workplace, I'll help out when I can.

However, we do delete all user accounts three months after they leave, so if they are too late, then they are.

We also allow them, although we check with Management first. If allowed, and usually is, they are generally moved into an OU that only allows emailing internally to prevent them 'accidently' sending emails outside the Domain that may mis-represent our school.

En nuestro colegio todavía no se ha dado este caso, aunque a priori no veo inconveniente en permitir la solicitud siempre y cuando el equipo directivo tenga conocimiento de ello y lo autorice previamente.  

Resulta interesante leer todas las respuestas aportadas en este hilo, ayuda a preveer posibles situaciones que se podrían dar en el futuro para poder ofrecer la mejor solución.
