I have my Admin Console set to notify me when users attempt to access their accounts from devices. For example, if a teacher tries to sign into their account on a personal computer, an email alert is sent to me. The alert takes me to Devices > Mobile & endpoints > Device Approvals. I can then block that device or approve it. This option will provide specific details regarding the account and device details. I review the details and then use the serial number, as needed, to add the device to our company-owned inventory. Devices can be added to the company-owned inventory via CSV file too.

If you have Education Plus licensing, you can set up OS minimum version levels through Context-Aware Access. Just be careful when rolling this out, I would set the rules up in monitor mode first before setting them to block.

https://support.google.com/a/answer/9262032?hl=en&ref_topic=9262521&sjid=15974407858335136692-NC&authuser=0#zippy=%2Cdefine-access-levelsbasic-mode

I use CAA to block unsupported macOS versions.

At the same time it makes sure everyone is logged in and properly synced.
